There is nothing like curling up on the couch with super cosy bowl of soup. This creamy ham and potato soup is the perfect way to use up leftovers and create comfort in a bowl. ![]() Serves: 4

Ingredients
195g (1.5 cups) shaved ham (check GF and soy free)
1 cup leek or onion, finely sliced
800g potatoes, peeled and chopped in small chunks
2 large carrots, peeled and diced
2 tbsp dairy free spread
1 tbsp garlic infused oil
2 tbsp gluten free all purpose flour
2.5 cups chicken stock (check it meets your allergy needs)
1.5 cups rice milk
6 tbsp frozen sweet corn kernels
1 tsp dried chives
Season with salt & pepper
2 tsp fresh parsley, finely chopped (optional)
