Allergy Today: Creamy Ham & Potato Soup Recipe

Winter is coming, and soup is an awesome option as the weather starts to cool down. There is nothing like curling up on the couch with super cosy bowl of soup. This creamy ham and potato soup is the perfect way to use up leftovers and create comfort in a bowl.

Serves: 4
Prep time: 10 minutes            Cook time: 30 minutes
Gluten free | Dairy free | Soy Free | Egg Free | Nut Free | Seafood Free
195g (1.5 cups) shaved ham (check GF and soy free)
1 cup leek or onion, finely sliced
800g potatoes, peeled and chopped in small chunks
2 large carrots, peeled and diced
2 tbsp dairy free spread
1 tbsp garlic infused oil
2 tbsp gluten free all purpose flour
2.5 cups chicken stock (check it meets your allergy needs)
1.5 cups rice milk
6 tbsp frozen sweet corn kernels
1 tsp dried chives
Season with salt & pepper
2 tsp fresh parsley, finely chopped (optional)
  1. Slice the ham, finely slice the leek or onion, and peel and chop the potatoes and carrots.
  2. Place a large saucepan over medium heat. Add the dairy free spread and fry the leek (or onion) and carrot for 3 minutes, until the carrot starts to soften.
  3. Then add the potato, ham and garlic-infused oil. Cook for 2 minutes, stirring every now and then to stop the vegetables from sticking to the bottom.
  4. Mix through the flour and cook for a further minute. Then pour the stock into the saucepan. Mix well and bring to the boil. Allow to cook for 12 minutes, stirring every couple of minutes, until the potatoes are tender.
  5. Reduce the heat to medium-low and add the rice milk, sweet corn and dried chives. Stir over the heat until thickened - this will take about 5 minutes.
  6. Taste and season with salt and pepper, if needed.
  7. Serve warm and garnish with a sprinkle of parsley, if desired.
  8. If at any point your soup becomes too thick, just stir through another splash of rice milk.
